Got a question... Do cats need both moist and dry foods to have a well-balanced Dukan Diet? Hoping for any answer or 2. Second question.. Since I am out of pancake mixes I used this this morning. I made it a blueberry mix and it worked great! I used the variation using wheat flour instead of oat flour. I hope this helps some of you who use your own food or who run out of pancake mixes.

Dukan Diet Pancake Mix Substitution (single serving).

4 tsp wheat gluten.

2 Tbsp Biscuit mix.

1/4 tsp baking soda.

1 tbsp oat flour (finely ground up oatmeal) Or Wheat flour.

2 tsp splenda.

Mix together and store in a baggie. Makes 1 serving. (I will make up a few batches at one time to have them on hand) Calories would be a little less when using wheat flour..

About 130 cals.

10g protien.

25g carbs.

Dukan Diet Mix:.

120 cals.

8g protein.

30g carbs.

Variations:.

Blueberry pancake mix:.

Take 1/2 tbsp of dried blueberries and chop them up and add to mix..

Chocolate chip:.

Take 2 tsp of mini or regular chocolate chips and chop them up a bit. Add to mix...

Good question... I dunno what is the answer to that question. I'll do some Googling and get back to you if I bump into an useful answer. You should email the people at Dukan Diet as they probably could assist you..

Thanks again Christina. This will be very helpful when Im on maintenance...

I have used this several times. I love it. It comes out great. I have the recipe hanging on my fridge where it is handy..

What do you add to the mix, Chris?.

Do you add milk?..

Carol, she does not say on her board either but guess I was thinking like Dukan Diet and used Milk but probably either one like the Dukan Diet pancakes. We will see what she says. I never even thought about it before...

Thanks! That's what I thought but wasn't sure. I didn't know if you added milk or eggs. Probably milk, right?..

LMAO!! I'm so sorry!! When I made the mix it was to use for the recipes that I make using the mix! I honestly never even thought about just making pancakes with it!!.

I'm a dunce!!! Personally I would add buttermilk, but I love buttermilk in stuff like this, but milk would work just as well. If you use milk then I would add in about 1/4-1/2 tsp baking powder to the mix as well. Usually if I make pancakes I use the recipe for the whole grain pancake mix since it's also a dry mix that you make in bulk. I keep it in a container with the instructions taped to the front! LOL!! I'm sure you could add in a tsp or so of egg beaters if you wanted to, but I don't think it's really nessasarry. If you want to make it a mix that you dont' have to add milk to, then add in a tbsp of dry non fat milk powder or buttermilk powder even, and that way you could just add water to the mix!..

I'm wordy aren't I?? I could have said what you said and it would have been fine!!! LOL!! I LOVE using buttermilk!! In fact I'm out and need to get some! COme to think of it I'm out of everything!!! I really need to go to the grocery store already!!..

I never have buttermilk on hand. I need to get that powdered kind to keep around...

Thanks for sharing the recipes with us!.

I do have a question though.....if I made up a big batch of your mix, how much would I use for one serving? (Did that make sense???).

Thanks, in advance!..

I'm not Christina (boy am I not Christina!, you don't want to watch me cook) but I believe 1/3 cup. That's how much most serving sizes are..

I get the SF low cal Maple Grove and it's 1/3 of a cup...

WOW I never thought of that!! I will make up a batch and tell you how much it measures to be sure! BRB.....

Well Carol was right on!! It measures 1/3 cup!! Hey Carol, if I ever win the lottery and open a diner will you come work with me??..

Oh My...you learn something every day!! I never knew they had buttermilk powder!!! That has to go on my list! Thanks again, Chris for these recipes. Kay..

Thanks Carol and Christina!.

Can't wait to make them.......

LOL Kay!!! I first bought it to make my baking mix. You have to keep it in the fridge, but I really like it! They have it where the condensed and evaporated milks are, atleast in my store. I have a pic of it somewhere. I'll see if I can find it...

That definitely sounds like what I need to get! I don't care for buttermilk, but am very well aware that baked goods just taste better when using buttermilk. When I am making your recipes, I put lemon in my ff milk to make the buttermilk. Works...but not as good! Thanks again for sharing! Kay..

I suppose I could have done that for myself!.

Sorry to make more work for you.....I just assumed you already knew how much it was since you said you made them in batches..

Thanks again...

Christina!! Tell you what, when you open your restaurant I'll be your taster..

Maybe a hostess. You do.

Not.

Want me in your kitchen...

I can cook, but I can't bake. When you cook, you can taste it and know if you need to add something or fix it. When you bake if you screw up, that's it...

Never thought of that....except that I usually taste the "raw" batter before I put it in the oven. And I wonder why I have a weight problem!!!!..

I love to bake and that is what I was in out restaurant. A baker.I do need recipes, tho. I am not creative in developing my own..

We did everything from cinnamon rolls to cakes, pies, puddings. Anything you can think of. Not sure if anyone would be familiar with Golden Corral but it is a chain and my husband is a manager for one and they have everything you think of! No wonder I had a weight problem. I lived in one for a long time. Worked lots of hours and ate lots of food...

Thanks for bumping this! I missed it the first time around...

Please forgive me if this is a dumb question but when you say wheat flour do you mean whole wheat flour? I'm out of pancake mix and I just want to be absolutely sure I have the ingredients right! Thank you...

Yep, just good ol whole wheat flour! I use King Authers that I get at Walmart...

I really wish I saw these recipes before I bought a whole whack of choc. chip pancakes off ebay!..

Got my puff pan out today so I want to make sure to have these recipes handy..

Ummm, I imagine these are silly questions from me but oh well....

What is wheat gluten and what is it used for?? Where do you get it? Is there anything else that could be used in it's place?.

I'm obviously not a cook :-/ My SO looked in SuperWal-Mart and the other grocery store here and didn't find any. There are so many great pancake recipes here though that I'd really like to be able to keep this substitute on hand..

Thanks for any input...

From Wikipedia,.

Gluten is used as a stabilizing agent or thickener in products such as ice-cream and ketchup, where it may be unexpected.[5][6] Foods of this kind present a problem because the hidden gluten constitutes a hazard for people with celiac disease..

In bread, it is a binding agent. You can also use arrowroot powder, guar gum, and or xantham gum. See.

I bought it at Kroger. It was next to the pancake mix in the smaller Kroger that I go to, but in the bigger store, it is in the organic section. I think it was $3 or $4..

Jen..

Gluten is the natural protein portion of the grain, that is separated. Wheat gluten not only adds texture, but flavor, and protein for very few calories. If you didn't use it; the end product would not taste the same and the protein content would be too low. I'm not sure where your SO looked in the grocery store, some stores put it in the baking section, others with the cereals. Maybe check again, or ask a clerk. I know our Super Wal-Marts carry it. Good luck...

Thanks, Jen. I think I've seen arrowroot powder at least, so I'll check into that. I'll also make sure he checks in the organic section (assuming our store has one *wry smile*). I think he just checked around the flours in the baking sections, and we were assuming it comes in a bag like flour. But I think the arrowroot powder comes packaged differently maybe, so I'll ask him to look a little differently..

Thanks for your help! Hope your new year is going well. Mine is starting off extremely cold and snowy for here, so I'm mostly just holing up with my Ron and Frank's hot chocolate I just got (good timing!). I found out this morning that at a minimum I didn't gain any weight over the holidays, and I may have even lost a pound.

I consider that an accomplishment in either case, and that's re-motivating me, lol..

Take good care. Thanks again...

Thanks, mostblestmom. This gives us some other ideas to check out. And knowing that SuperWal-Marts carry it is a big help. I think he just didn't know (nor did I) really what we were looking for before. Maybe I'll have to brave the snow and ice here and go with him to look. Getting him to actually ask about anything takes an act of congress, lol.

I appreciate the help!..

Christina I am at the end of day 10 and I have to thank you for makiing it so easy for me. Your recipes are amazing. Where do you buy buttermilk powder and is it as good as fresh buttermilk? I always land up throwing out 3/4 of th quart because it goes bad before I can use it up...

You can find powdered buttermilk in the baking aisle of most supermarkets. It comes in a round container, the name is Saco...
