I had exactly the same experience. In fact, a lot of the recipes I've tried from the RAWvolution book seem a bit off. Not in concept, but in measurements..

I've made two batches of this and, although georgous as it was, it didn't look like the pictires in the book. I came to the same conclusion as James - that a blended portion of onion might help. I alos used the thinnest slicer on my mandolin to cut the onions but I think they were still much chunkier than they could be. Anyway, I've been feeding it to my not-yet raw mom and she loves it too..

It's been in the dehydrator about 13 hours and doesn't even resemble anything but a mess. Ick ... what a disaster! lol ... Oh well, part of the learning process!.
I'll definitely try blending the onion a bit more, and up'ing the amounts of the other ingredients. If anyone has any other suggestions, please let me know. I was really looking forward to this...

Another suggestion... the Medifast recipe says to slice the onions with the slicing disc in your Medifast food processor. I don't know about yours, but my KitchenAid slicing disc has two settings thick and not-so-thick. I think next time I may try slicing the onions that I.

Try making the batter as directed in the book (minus the onion...) Then spread it onto the teflex sheet as usual. Then press the onion into the batter. This way, you have an even cracker/bread with a good consistency... plus you can add as much onion as you want or don't want. Good Luck!..

I asked my friend does use a mandoline (so the onion would be very thin) and other than that she follows the Medifast recipe exactly. She said it's nice and spreadable. The longer you leave flax though the more it will absorb water. So maybe spread quickly! She did use the whole amount of nama shoyu suggested, and spread them very thin..

Otherwise the Medifast recipe is in the new book released called RawVolution. Out of consideration for the authors most people here don't posted recipes from other people's books without permission...
I meant to try the onion bread, but RawVolution has been put on restriction by my husband and I! We tried 2 recipes for dinner last week and it was very emotionally upsetting because it just wasn't good. The recipes in this book seem to use way tooooo much nama shoyu for our taste...I want to taste the food, not just soy. I honestly cried the next day over that dinner because it made me wonder if we could succeed eating raw! I'm OK now, but I don't think I'll be using that book anytime soon. I should've tried the onion bread sooner! But then again, there's nama shoyu in that Medifast recipe too - so maybe it's just not for me..

There is half a cup of nama shoyu in the onion bread... given your experience with the other recipes it sounds like it would not be for you. Miriam tried the Medifast recipe with less, and didn't find the flavour worked. Personally we don't really use nama shoyu, so I would be more likely to make the one here..
His book is gorgeous though... I just love the photos. I've been served a few meals from it and enjoyed them..

I haven't tried this recipe, but have a friend who did and loved it. what i'm wondering is whether you left it dehydrate long enough on the first side. the Medifast recipe says 24 hours, then flip and go another 12 hours!.

When you make the batter, use his recipie, but then I puree half the batter in the FP and I also add some fresh herbs like cilantro or basil, I just made some and it's brilliant!! It took about 2 days max. You must spread it thinly-ish and evenly and really flip it when you can turn it over on to the mesh. It is worth it.

Actually, I didn't give it a chance to be done on the first side. It looked absolutely in no way like batter at all. It was pretty ugly! lol ... There was just no liquid to it ... the seeds (ground) were just sticking to the onions because of the namu shoya. It was ugly..
I guess if I'd left it in longer I could have had a very weird version of onion rings!!!.

Thanks, Trinity! It was the puree part that eluded me on the first attempt! That would really make it more of a "batter" and not the mess I had!.
Maybe I'll give it another shot this weekend! I had hoped to do it over the long weekend we just had, because of the time it takes for this recipe, but had a few others I'd wanted to squeeze in too. So ... maybe I'll just save this next weekend for onion bread!.

I just got my first batch of onion bread, although I added some grind up sesame seeds too and it is very nice-my son and my husband are eating eat with great pleasure. I like it too, although lately I am not craving for dehydrated stuff as much anymore. It did not dry that many hours though - I think 20 hours on one side and 2-3 on the other...

I wasn't sure how the onion bread texture should be, and mine was soft, but kinda fell apart when I tried to turn it over, So I let it dehydrate to a cracker texture..
I think my batter may have been too soft. I am new to the Medifast food processor and think I may have processed the onions too much, like the mush MadMel said not to do!! What is the consistency of the batter before putting it in the dehydrator,and how thick do you make the bread?? thanks..
I did not try the Medifast recipe 1/2 c soy turned me off. Did all of you who made this use the 1/2 cup? is it soy overpowered?..
