I just use Paul's bundt cake recipe with mashed banana instead of applesauce and add a little SF jello pudding mix for extra banana flavor..
Pancake mix.
1/4 c eggbeaters.
1/2 c mashed banana.
Small amount of SF banana pudding powder (I use a tablespoon).
1/4 tsp baking powder.
1/4 tsp vanilla.
Splenda to taste.
You can pour it in a small loaf pan instead of nuking it in the mixing bowl - nuke it for about 3 minutes...
Any Whey is a protein powder that you can bake with. If you go Christina Gray's recipe board I think she has a link to it. I do most Dukan Diet on my own and the baking mixes I use don't have enough protein in them so I add Any Whey to jack the protein up. I purchase a large container of it on Amazon.com. It's around $30 but lasts a long time. Be sure to select the one that qualifies for free super saver shipping...

Ok, I admit I've been craving it and that may have been why I bought too many bananas last week. I've always used a mix, but decided to branch out. I found a highly rated one on the web that didn't look too difficult and made some Dukan Diet friendly changes. It smelled SO good, and I'm carefully munching on it now (right out of the oven). So - here's the recipe I came up with:.
Banana Bread.
2 c. Carbalose flour.
1 tsp. baking soda.
1/4 tsp. salt.
1/2 c. Splenda Brown sugar blend.
1/2 c. unsweetened applesauce.
2 eggs.
1/4 c. skim milk.
4 small, ripe bananas - mashed.
Preheat oven to 350 deg..
Combine the dry ingredients in one bowl. Combine wet ingredients in another. Dump the wet ingredients into the dry and stir until just combined. It will be VERY thick. Pour into a greased (I used butter flavored Pam) loaf pan. Bake 55-60 minutes - it will be dark brown and a toothpick inserted into the center should come out clean..
Ready for the stats for 1/12 of the loaf ? .
Calories: 130.
Fat: 1 g.
Carb: 17 g.
Protein: 7 g.
Fiber 6 g.
Can be subbed for breakfast or snack/dessert entree..
And when hubby and his friend find it and eat the rest of it, I'll be the only one who knows it's practically fat free and 1/2 the calories of a "normal" banana bread LOL...
